The Blue Goose Brings Liquor, Billiards To The EDGE

The EDGE District continues to grow and flourish. The Blue Goose is the latest addition to the eclectic mix of businesses that include clubs for comedy and live music, California style tacos, some of the best Cuban bites in Florida, vintage and antique stores featuring the uncommon objects you never knew you needed and soon two new street food concepts.

The Blue Goose manages to add another dimension to the district's roster. The bar features an array of liquors from the old familiars to the high end with an added emphasis on whiskey. The bar also features billiards tables and upcycled church pews.

Once called The Bearded Thistle, the name "The Blue Goose" comes from "the section of a train that was raised and fancy…It's where the management would sit," says co-owner Alex Gahhos. Alex and his partner were interested in moving toward a name that is a bit more industrial. The name change came after the owners decided to go for something beyond an Irish Bar. Situated next to Engine 9 Burgers, The Blues Goose holds the same industrial influence meshed with simple concepts and refined menus.

The work on the interior, dark oak floors, exposed brick walls and soft lights that recall the lanterns of an old New England dockside watering hole or a prohibition era bootlegger's basement lounge, was done almost entirely by the owners. The emphasis on handling much of the work themselves gives this bar the barebone, brick and mortar vibe that has made the EDGE District the premiere destination for young entrepreneurs.

Though, Gahhos and crew agree that as far as building and innovating on their original concept goes, "we really are still in the process and always will be."

The bar is non-smoking and features ample space for a mass amount of patrons. The Blue Goose is "a unique place to meet and talk with friends, play some pool, and have a few drinks. We have a lot of plans for the future but for now we're keeping it simple."
