As the Historic Vinoy Resort continues to unveil the newest stages of its sweeping renovation, one of its most anticipated new offerings is now open. Parasol, a Latin American-inspired restaurant overlooking the water, opened today at The Vinoy Resort and Golf Club, Autograph Collection.
Located next to Paul’s Landing in The Vinoy’s glamorous pool area, the full-service outdoor restaurant features panoramic views of the Tampa Bay waterfront, while also overlooking The Vinoy’s beautiful new pool deck. Guests can expect “an energetic, island-like atmosphere with a menu starring fresh seafood, bright flavors and spices, and tropical craft cocktails ideal for poolside indulging.”

In addition to the food and drink, Parasol also features a marble wrap-around bar and living green wall, creating an immersive waterfront experience for locals and hotel guests alike. Parasol joins the roster of fantastic and food and beverage concepts at the storied hotel, with the recently opened Lottie lobby café and the grand re-opened Veranda on The Vinoy’s celebrated patio.
“Parasol brings The Vinoy’s poolscape to life with its energizing atmosphere along St. Petersburg’s dynamic waterfront,” said Vanessa Williams, The Vinoy’s general manager. “As the resort’s thoughtful renovations continue, Parasol elevates The Vinoy as an inviting and stylish social hub, welcoming both resort guests and the local community.”
Parasol is open daily from 11 am – 7 pm. The menu features shareables such as lobster quesadillas and grouper ceviche, a full roster of salads and bowls, and a tantalizing list of sandwiches and wraps. The queso blanco burger is already calling our name.
Parasol also features a signature cocktail menu, frozen cocktails, and a full wine and beer list. Pool side service from Parasol is available, and there is a kids menu, as well. Learn more about Parasol and make reservations here.
