Jay Bowrey turned his passion into a job with Grillin’ N Chillin,’ a Pinellas County hidden gem

Jay Bowery is slinging some of the best brisket on the beach

Jay Bowrey’s Grillin’ N Chillin’ (6708 Gulf Blvd) has become a beloved spot for barbecue enthusiasts on the sunny shores of St. Pete Beach, Fl. Always finding joy in cooking for others, Jay never imagined that his love for barbecue would become a cornerstone of his life. When he was laid off from his job, he turned this cherished hobby into a thriving business.

Jay moved to the South from New York in 2004 and although it was a significant shift, it brought him closer to the heart of barbecue culture. He started experimenting with his own rubs and techniques, spending nearly seven years perfecting his craft with the feedback he received. “I never thought I’d turn BBQ into a business, but I love to cook, and turning my passion into my job is anyone’s dream come true.”

Founded 10 years ago as a mobile vendor

In 2014, Jay founded Grillin’ N Chillin’, initially operating as a mobile vendor. After years of hard work, he secured a spot on St. Pete Beach, where he has been for the past five years.

Opening his doors just six months before the pandemic hit, Jay faced challenges that would have shuttered many new businesses. Yet, Grillin’ N Chillin’ remained open, and Jay even found ways to give back to the community during those tough times. “Customer service is just as important as great food,” he says with pride. This commitment to service has earned him a loyal customer base, including many tourists who return year after year, eager to taste his consistent creations.

Standout smoked corned beef brisket

Jay’s menu is straightforward but packed with flavor. He keeps it simple with six entrees and six sides, focusing on authenticity and perfection. His smoked corned beef brisket is a standout, drawing people from all over. “We disappoint people,” Jay laughs, explaining that barbecue takes time, and when they sell out, it’s gone until the next batch is ready. “We don’t have a microwave here. This isn’t fast food.”

Raised in a family with Caribbean roots from Guyana, Jay infuses some of those vibrant flavors into his dishes. His personal favorites? The ribs and brisket, a testament to the evolution of his barbecue journey that began with pulled pork.

Going against the grain in the BBQ world

Being a small Black business owner from the North, Jay has truly gone against the grain in the barbecue world. He had to learn and master Southern barbecue techniques, immersing himself in a culinary tradition far from his New York upbringing. His dedication to authentic Southern BBQ has set him apart.

Looking ahead, Jay is focused on growing his brand. His 21-spice rub is already available for purchase by over-the-phone appointments and in-store pickup; He’s working on making it available online. There’s also a sweet heat BBQ sauce in the pipeline, promising to bring even more of his signature flavors to kitchens everywhere.
