It can be easy to overlook given its modest appearance and location at the front of a hotel, but those in the know will tell you that Nuevo Vallarta is an absolute must-visit, and the very definition of a hidden gem. Located in Pinellas Park at 9359 Hwy 19 North, the family-owned Mexican restaurant is a cult favorite for its authentic eats, big portions, and friendly service.
The extensive menu showcases the best in Mexican cooking with big flavor, slow-cooked meats, sizzling fajitas, and even extensive vegetarian, children’s, and dessert menus. While Nuevo Vallarta excels in traditional Mexican staples and platters like street tacos, gigantic burritos, and combination plates, they also bring some excellent creativity to the game.

Among the dozens of dishes listed on the menu, perhaps the biggest attention getter is the Grilled Pineapple. More than what it sounds like, this is a whole pineapple sliced open and stuffed with grilled chicken, carnitas, chorizo, bell peppers, onions, and tomatoes, served along rice, beans, guacamole salad, and tortillas. Think of it as fajitas served inside a fresh pineapple.
Other favorites include the flavorful Sopa de Pollo, the meat-stacked Nachos los Tres Amigos, the gigantic Burrito Loco, the spicy Steak a la Mexicana, and the flavorful Carnitas Vallartas featuring slow-braised pork marinated in Negra Modelo beer, Mexican spices, and citrus.
