January has been rebranded as Vegan-uary, and while I don’t need an excuse to enjoy delicious vegan food, a charming food truck in Tarpon Springs is offering a menu that’s hard to resist. Solid Rock Eats, we truly appreciate you.
Here’s a bit of background on the food truck and its mission: Solid Rock Florida is a 501(c)(3) nonprofit committed to compassion, sustainability, and education. All of their food is 100% plant-based, aligning with their cruelty-free mission. Proceeds from sales directly benefit Solid Rock Community School and Sanctuary at Solid Rock.

We should note that the menu may shift from week to week. The owners are quite creative, and utilize fresh ingredients to build out their full menu during pop-ups.
