When news broke that the minds behind Tampa’s beautifully designed, always bustling Oxford Exchange had their sights set on the Burg, the city was abuzz. The wait for The Peabody is finally over — and it is a delectable complement to the All Children’s new campus in St. Pete. The Peabody opens to the public Friday, September 21st.

The Peabody’s menu emphasizes quick grab-and-go meals, but its studious design may make you hang around for a while.

Rachel Bennett, the executive sous chef at Oxford Exchange and The Peabody’s executive chef, crafted a menu brimming with complex flavors and palatable dishes. A fan of grilled cheese? The Peabody puts its own gourmet twist on the dish. It’s packed with provonello, burrata and bacon and pressed on sourdough bread.

The fish tacos feature a chili glaze with kale slaw, pico and cumin aioli.

The brunch is next-level amazing with dishes like cinnamon swirl sour dough French toast and un-be-leiv-able eggs Benedict. Of course, this is just a small sampling of what the next big thing in the Burg is brewing up.

The Peabody balances refinement with comfort; high-concept with simplicity. It’s everything a good restaurant ought to be and a welcome addition to our burgeoning culinary scene. Now if you excuse us, we’re going to sip on this rhapsodic green unicorn smoothie — made with kale, banana, ginger, apple, pineapple, agave and coconut water.
