Isu, the city’s first Nikkei sushi lounge, set to open this July underneath Fortu at 97 Central Ave.

Isu’s 50-seat lounge is the brainchild of Shan Bakrac, whose work has recently garnered Michelin’s attention at Fortu. “The Michelin Guide has deepened my understanding of global culinary techniques,” Bakrac explains. “With Isu, I want to create something innovative yet approachable, showcasing the complementary flavors of Peruvian and Japanese cuisines.”

What is Nikkei cuisine? Nikkei was born from the Japanese immigrant communities in Peru. In this style of dining, sushi rolls might incorporate tropical fruits or spicy aji peppers, while traditional Japanese plates like gyoza or sashimi are reimagined with Peruvian spices and herbs.

Nikkei dining celebrates the interplay of two rich culinary traditions, offering an experience that is as inventive as it is rooted in history—and something we’ve yet to experience in St. Pete. “Isu may also attract Michelin evaluators, who visit annually to assess my other restaurant, Fortu, for sustained or future accolades,” adds Bakrac.

Embark on a culinary journey at Isu

“Unlike the city’s existing sushi spots, which often feature repetitive menus, Isu will offer a dynamic dining experience,” says Bakrac. Guests can choose from an à la carte menu, indulge in an eight-course tasting journey, or simply unwind with live music on weekends. The blend of fine dining and entertainment ensures there’s something for every palate.

Central to Isu’s menu are eight seasonally changing sushi rolls, each drawing inspiration from Peruvian ingredients for unique, bold flavors. Small plates promise to be equally captivating, with standout options like Peruvian-style gyoza, dry-aged pork chop katsu, yakitori skewers, and ceviches that harmonize fresh fish with citrusy, herbaceous notes.

This represents more than a new restaurant—it’s an invitation to embark on a culinary journey where tradition meets innovation. With its top-quality ingredients, thoughtful menu, and vibrant atmosphere, Isu might not only fill a gap in the local dining scene but also elevate it to new heights.
