Farm-To-Fork Fresh Concepts at the Vinoy

Marchand’s Bar & Grill at The Vinoy Renaissance Hotel in downtown St. Pete has cultivated a transparent, rolling menu. This Farm-To-Fork concept provides customers with a guaranteed fresh meal expertly paired with wines and beers that invigorate the incendiary flavors radiating from the porcelain plates. Executive Chef Mark Heimann and Chef de Cuisine Ross Clingman have developed a menu that collects ingredients from over a dozen local farms that cater to those with vegan, vegetarian and gluten restrictions, essentially all forms of dietary repudiation.

Sea scallops, buttermilk polenta, crispy kale, green strawberries and spiced almonds comprise one plate while another, a Manhattan steak, broccoli puree with a loaded baked potato gnocchi resonates with a decadence unbeknownst to your atypical conscious consumer. Even more inspired was the dessert duo provided at the February 27 media dinner. The Bonnie and Clyde of sweets, a Plant City strawberry cannoli & banana cream pie is bereft with a sugar laced crunch befitting a meal so tactfully presented, prepared and served. The dessert steals your awe and leaves you craving for more.

Heimann and Clingman are slow cooking the modern American classic in their kitchen. They share a philosophy that guests enter their dining room with independent palates, tastes and experiences and their menu is designed to suit and satisfy all of your intricate hungers. With that philosophy in mind, their eclectic menu teases the culinary intrigue that resides in all of us. Above all else, this new and rare menu is indigenous to the area. Their menu sources the highest quality local product. They believe the best ingredients can be found close to home. This isn’t the only innovation at Marchand’s.  The restaruant’s beloved and in-demand brunch is back with a pick-three-items menu for only $32.  The a la carte table service prevents from ardent plate waste and ensures that all items are fresh and made to order.  The options range from the traditional fare of waffles, french toast and omelettes to more exclusive fare such as salmon and short ribs.  

This marvelous inclination toward a more intimate dining experience between chef and customer makes Marchand’s a must visit.  Their new menu will officially debut on March 6. Reserve your table now or else the distance between farm-to-fork may grow exponentially.
