French-inspired Exquisite Bistro brings European flair to St. Pete this November

Kevin Ollier, owner of Exquisite Bistro, has taken over the space formerly known as The Corkroom (397 Fifth St. S.), with a tentative debut set for November 15. “We can’t wait to join the St. Pete community,” Ollier expresses. Under his new ownership, the former Corkroom has been transformed. The minimalist, upscale setting, curated wine list, and delectable small plates invite guests to “unwind, savor, and connect.”

Ollier shared with I Love The Burg that the wine list at Exquisite Bistro emphasizes quality and variety. Highlights include Harvey and Harriet Red Blend, a bold, smooth red that pairs well with richer dishes; La Crema Chardonnay, a crisp, vibrant white perfect for lighter fare; and a French dessert wine, an ideal finish to a sweet treat.

Exquisite Bistro offers an array of European fare to experiment with in pairing with wine. Signature charcuterie boards will feature artisanal ingredients, along with an ocean board of fresh seafood and rich coastal flavors. Baked brie with honey, seared tuna, and classics like caprese and bruschetta will also be served. “Presentation is key for us,” says Ollier, “so guests can expect beautifully plated dishes that enhance the dining experience.”
