Burg Cookie Co. and Maddie’s Cakes opening sweet brick and mortar in EDGE District

Burg Cookie Co and Maddie’s Cakes have made a splash in the EDGE District of St. Petersburg. The pair of businesses joined forces inside a shipping container at the EDGE Collective earlier in 2021. The minds behind both concept will soon open in the space at 25 9th Street North.

Ashlea O’Connor, owner of Burg Cookie Co, is renowned for her massive deep dish cookies. This blogger also got to experience the gooey greatness of O’Connor’s vegan, gluten-free chocolate chip cookie.

Other flavors include s’mores, Reese’s Pieces, Reese’s Crunch, Oreo, Fruity Pebbles, Rice Krispies Treats, Coconut Macadamia & White Chocolate, and Rolo Salted Chocolate.

The owner of Maddie’s Cakes has had a passion for baking most of her life.

“My passion for baking was fostered at a small age from my grandmother who taught me how to bake our family recipes, roll my pie crust out (the right way), even how to frost a cake,” writes the bakery owner. “Thankfully, I’m using all the skills she taught me to bring you Maddie’s Cakes.”

Maddie started the business at the outset of the pandemic in 2020. Her confections can now be found at local restaurants, in addition to the shipping container space in the EDGE.

Her specialties include massive blondies, cake pops, buttercream cakes, double chocolate brownies, and Congo bars.

An official opening date is still TBA. Follow Maddie’s Cake and Burg Cookie Co on Instagram for updates on an official debut.

“Ashlea and I can’t wait to share with you what we’ve been working on lately. Just a reminder, for the last two weekends in September the cookie container will only be open on Fridays and Saturdays,” wrote the pair in an announcement on Instagram.
