Deep dish cookie concept, Burg Cookie Co., joining the EDGE District

Burg Cookie Co. a locally owned and operated bakery specializing in deep dish cookies, officially opens at the EDGE Collective in St. Petersburg on June 10.

The Burg Cookie Co. first caught our attention with a photo of their triple chocolate chip pound cake cookies — and now it has officially joined the EDGE Collective in St. Petersburg. Burg Cookie Co will be situated near the newly opened Space Fruit container.

Burg Cookie Co prepares for EDGE District debut

“We will be serving deep dish cookies (some of our flavors: s’mores, Reese’s Pieces, Reese’s Crunch, Oreo, Fruity Pebbles, Rice Krispies Treats, Coconut Macadamia & White Chocolate, Rolo Salted Chocolate, Chocolate Chip (vegan), a rotating special cookie each month – like Lucky Charms cookie for the month of March that you can order online only – and more),” wrote owner Ashlea O’Connor in an email to I Love the ‘Burg. “We will also be serving deep dish cookie ice cream sundaes (served with a scoop of ice cream and choose your toppings).”

Since the initial (delicious) social media teasers, Burg Cookie Co has gone on to serve the Sunshine City with boxes of massive custom cookies. The concept has already helped add some sweetness to local businesses with poundcake cookies branded with yummy frosting. Many will remember O’Connor as the owner of Fido’s Food Truck – the area’s first food truck specifically for pups.

Pound cake cookies in the Sunshine City

The baker and St. Pete local is now whipping up treats for humans — and is currently fulfilling orders on her website. We caught up with O’Connor to learn a bit more about the businesses.

“I will be baking out of Florida Chefs Kitchen – a shared chefs kitchen in Tyrone,” said Burg Cookie Co. Owner Ashlea O’Connor. ” I will be accepting wholesale orders from local businesses as well as selling to the general public.”

Several spots around the Tampa Bay region have already expressed interest in carrying these massive, melty delights, but an official list is still TBA. O’Connor provided a few details on the menu to whet our appetite while we wait.

“Some of my menu items include these Inside Out Cookies: Triple Chocolate Chip, Rolo Salted Caramel, and Reese’s Peanut butter Crunch.” We had to take a collective breath when we read Reese’s Peanut Butter Crunch. “Pound Cake & Sugar Cookies will also be available for custom cookies, in addition to vegan cookies and donuts.”

Small business branded cookies available 

Cooking and baking is a lifelong passion of O’Connor’s, so opening her own cookie kitchen seems natural.

That love of baking melds perfectly with her love of small business. O’Connor notes that she can put almost any business logo on their pound cake cookies. Who else is hungry for a big ole’ I Love the ‘Burg pound cake cookie?
